White portabello mushrooms have had a longer time to develop than common white button mushrooms, so the flesh tastes firmer and meatier.
The cap of the white portabello is often used in oven dishes. It is approximately 12 cm in diameter.
Flavour and use
The flavour of the white portabello can be enhanced by stuffing it with fillings of vegetables, cheese, ragout or minced meat. It also tastes fabulous stirred into risotto dishes.
