Portobello

Latin name: Agaricus bisporus

This variant of the Chestnut Mushroom came to theNetherlands from the USA, where it has been popular as a barbecue mushroom for some time. Some Dutch growers have specialised in cultivating this particular mushroom. The Portabella is available all year round.

Description
The Portabella is a variant of the Chestnut Mushroom which has been specially cultivated to grow very large.  The Portabella has a large cap and a short stem. The gills on the underside of the cap are brown and clearly visible. The flesh is white and very firm.

Storage and shelf life
Store the Portabella in the vegetable drawer of your refrigerator. The Portabella is best stored at a temperature of between 4° and 7°C. It will then keep for 5 to 7 days.

Flavour and use
Clean the Portabella with a small brush or a piece of kitchen paper. The cap of the Portabella can be between 6 and 12 cm across, and it is perfect for grilling whole or stuffing. Remove the stem before stuffing.

The Portabella is delicious stuffed with goat’s cheese and honey and baked in the oven.
